The Japanese Ambassador to the Philippines, Koshikawa Kazuhiko, has embraced Filipino culture by taking on a special culinary challenge: cooking the classic Filipino dish sinigang sa kamias, but with a unique Japanese twist. In a vlog released by the Japanese embassy, Ambassador Kazuhiko showcased his cooking skills while wearing a barong Tagalog and using chopsticks. His version of shrimp sinigang included traditional ingredients like onions, tomatoes, taro, water spinach, and fresh kamias, along with distinct Japanese elements such as sake and mirin, known for their umami flavor.
His presentation of the dish was meticulous, and he shared a valuable cooking tip to keep the kangkong vibrant green by transferring it to ice water after boiling. Chef Suzuki, who assisted the ambassador in the kitchen, confirmed the deliciousness of their creation.
This initiative is part of the embassy’s “Asim-Kilig Time” video series, aiming to showcase the tantalizing aroma of Filipino dishes and the essence of Filipino hospitality. Through this cultural exchange, Ambassador Kazuhiko spreads cheer and highlights the rich culinary traditions of the Philippines during the holiday season.
